Substrate AI revolutionizes protein production with US company Tomorrow Foods

The project will be carried out with Serenity Star, the artificial intelligence ecosystem developed by Substrate AI.

Madrid, October 2024. Substrate AI, the artificial intelligence company listed on BME Growth, will use its artificial intelligence technology to revolutionize the production of vegetable proteins for industrial use together with the American company Tomorrow Foods.
Tomorrow Foods is a vegetable protein production company based in the USA with production plants in Argentina whose objective is to transform the use of proteins in the agri-food and biotechnology industry by replacing those of animal origin with new solutions of vegetable origin, mainly derived from peas, chickpeas and beans, thus promoting the disappearance of the use of animal derivatives in industrial production.

The heart of this company is its protein extraction and isolation plants, automated and mapped with sensors to collect more than 50,000 data for each production batch. The objective is to take advantage of all the value compressed in the crops to break them down into phases or fractions and recombine them and convert them into the products that the world demands for the transition of its production systems. This process makes it possible to obtain different products with very high added value, using the same raw material and the same plant.

The company currently has customers in Latin America and Europe and offers solutions that cover different segments such as meat analogues, dairy analogues, dressings and functional ingredients that solve specific challenges of large companies.

AI will enable Tomorrow Food to leverage the vast amount of data generated by its plants and research in order to fine-tune extraction processes and obtain more and better products that can replace animal products in the value chain.
